Join Pure South Dining for an exclusive Wine Dinner with our friends from Singlefile Wines. Executive Chef David Hall will craft a bespoke menu to delicately pair with some of the best West Australian wine.

This Wine Dinner is one not to be missed, with excellent vintages being poured for the first time, including the 2022 Small Batch ‘Old School’ Chardonnay, along with a handpicked selection by Patrick Corbett. 

 The ‘Old School’ is just one of nine wines that will be poured on the evening, sitting alongside a bespoke four-course menu that will hold true to Pure South’s philosophy of heroing Tassie produce and the farmers, fishermen and suppliers behind the plate.

Dedication to wine & tradition

Singlefile Wines is the result of our family’s dedication to crafting exceptional wines in Western Australia’s Great Southern wine region.

Founded by wine enthusiasts Philip and Vivienne Snowden, their daughter Pam and son-in-law Patrick Corbett, the winery reflects a shared passion for tradition and terroir.

Singlefile’s approach is to track down the best fruit across the sub-regions of the Great Southern, then apply minimal intervention to craft singular examples of the Singlefile style. Singlefile Wines are made in a thoughtful and refined style, with elegance, fruit-driven complexity and an enticing length of flavour.

Great Southern Wine, a family affair

Patrick Corbett, alongside his wife Pamela and her parents, Phil and Vivienne Snowden, established Singlefile Wines in 2007 — marking the beginning of their journey towards showcasing the best sites and wines of the Great Southern region.

Patrick became the Managing Director and was responsible for building the business with the support of Phil, Viv and Pam. Today, Patrick leads the team and manages all aspects of the business, including grower relationships, wine-making, sales and marketing. Together, the Corbett and Snowden families have grown Singlefile Wines from its humble beginnings into a respected winery, preserving its familial essence and boutique foundations.
