Head Chef Ben John, formerly of Vue de monde, brings a wealth of experience and innovation to the table. Known for his ability to elevate simple produce into extraordinary dishes, Ben combines contemporary techniques with a deep respect for the purity of Tasmania. Under his leadership, the Valentine’s Day menu promises to delight even the most discerning palates.
Executive Chef David Hall, a long-time champion of provenance and sustainability, collaborates closely with our Tasmanian farmers, fishermen, and artisans to source the finest seasonal ingredients. Together, David & Ben deliver a dining experience that is as thoughtful as it is delicious, ensuring every dish is a true celebration of Tasmania’s bounty.
Our three-course Valentine’s Day menu showcases the best of Tasmania’s rich and diverse landscape. Begin your evening with indulgent entrees including House-cured trout, with shellfish bavarois.
For mains, David Hall is working with King Island beef, Scottsdale Pork, Hanslow Farm & Bruny Island Cheese Co. to showcase the best of Tassie produce. Dessert, will hero our favourites from King Island Dairy to Burlington Farm Berries.
