Cold southern waters produce all of our favourite seafood: scallops, oysters, Tasmanian king crab, stripey trumpeter, king fish, ocean trout, mussels. The majority of seafood is at its best in winter, when the waters are coldest.
Chef Ashley Davis has been inspired to create Winter Seafood Dinners to share the best of the catch this winter. The catch is ethically harvested, sustainable and super fresh. The menu at each dinner will be a reflection of the catch.
