Executive Chef David Hall will craft a bespoke five-course menu that embodies the Pure South Dining philosophy of celebrating Tasmanian produce. Each dish is designed to hero the local ingredients, showcasing the absolute best that Tasmania has to offer. From succulent seafood to tender meats and fresh, vibrant vegetables, our menu reflects the dedication and passion of the farmers, fishermen, and suppliers who bring these ingredients to our table.

Dalrymple Vineyards was established by Bertle and Anne Sundstrup in 1987. They were visionaries travelling to France for operation and guidance before planting their first vines.
Situated in the heart of the Pipers River region in Northern Tasmania, almost equidistant from Launceston, Scottsdale & George Town, the Sundstrups planted their vines on sloping hills that overlook the demanding Bass Strait.
Today, Dalrymple Vineyards is driven by the relentless pursuit of perfection from the same vines planted over 30 years ago. From every patch of land comes the demand for meticulous attention that, when granted, awards exceptional Pinot Noir and Chardonnay wines perfectly reflective of the pristine beauty of every single site.
Vigneron Peter Caldwell is hand-selecting seven Dalrymple Vineyards Wines from their estate and single-site collection, featuring stunning cool climate Pinot Noir, Pinot Meunier and Chardonnay.

Peter Caldwell was raised on his parents’ Tasmanian sheep farm before winemaking captured his heart. After studying the craft at Roseworthy Agricultural College, Pete took flight, gathering many ”aha” moments across Burgundy, Bordeaux, California and New Zealand. He’ll never forget his first vintage overseas, tasting juice straight off the press at a chateau in Bordeaux. “It showed me just how great wine can be when it’s not pushed or forced,” he says. “And if it’s the right variety, grown in the right place, and made in the right way.”
