On Friday, 16th August, Pure South Dining hosted an exclusive Wine Dinner featuring the exceptional wines from Dalrymple Vineyards. This unique culinary event paired the finest Tasmanian wines with a bespoke five-course menu crafted by Executive Chef David Hall, embodying the Pure South Dining philosophy of celebrating Tasmanian produce. Each dish highlighted local ingredients, showcasing the dedication and passion of the farmers, fishermen, and suppliers who brought these ingredients to the table.

Dalrymple Vineyards was established by Bertle and Anne Sundstrup in 1987. They were visionaries who traveled to France for inspiration and guidance before planting their first vines. Situated in the heart of the Pipers River region in Northern Tasmania, almost equidistant from Launceston, Scottsdale, and George Town, the Sundstrups planted their vines on sloping hills overlooking the demanding Bass Strait.Pure South Dining

This Wine Dinner was an unforgettable experience for wine enthusiasts and food lovers alike. We were honoured to highlight a selection of outstanding vintages from Dalrymple Vineyards, renowned for its commitment to quality and excellence in winemaking.
Peter Caldwell was raised on his parents’ Tasmanian sheep farm before winemaking captured his heart. After studying the craft at Roseworthy Agricultural College, Pete gathered many “aha” moments across Burgundy, Bordeaux, California, and New Zealand. He often recalled his first vintage overseas, tasting juice straight off the press at a chateau in Bordeaux: “It showed me just how great wine can be when it’s not pushed or forced,” he said. “And if it’s the right variety, grown in the right place, and made in the right way.”
